Raspberry & Pineapple Daiquiri

Two delicious flavours come together to make another excellent addition to the Daiquiri family. This is the Raspberry and Pineapple Daiquiri.

There are many Daiquiri recipes out there that mix a lot of great flavours. This recipe is a great example of how you can take one of the most basic cocktails and turn it into something special and delicious. The main staple of a Daiquiri is the inclusion of Rum and Lime Juice which help give a good balance in the drink along with a sweet component such as Simple Syrup or a sweet fruit juice.


This is also a very aesthetically pleasing cocktail to look at, as is comes in two layers that create a beautiful set set style colour. The first layer is a simple blend of Raspberries muddled with Lime Juice and Simple Syrup. The top layer is where the good stuff comes in, with a good mix of Coconut Rum, Lime Juice and Pineapple Juice. When these are layered correctly , you get a great drinking experience of one layer after the other on your first few sips. After a bit of drinking they mix in the glass and give you a complete spectrum of the flavours this cocktail brings.


Cocktails like these belong front and center on a menu, especially now the Summertime is here and fruity flavours are the order of the day. In terms of layered cocktails, it is one of the easiest to make. Share this with your friends and family at your next party and they will not be disappointed.


Here is how it is made.




Raspberry & Pineapple Daiquiri Ingredients


Bottom Layer (Raspberry)

  • 6-8 Raspberries

  • 1/2 oz. (15 ml) Simple Syrup

  • 3/4 oz. (22.5 ml) Lime Juice


Bottom Layer (Pineapple)

  • 2 oz.(60 ml) Coconut Rum

  • 1 oz. (30ml) Pineapple Juice

  • 1/4. (7.5 ml) Lime Juice


Garnish : Pineapple and Raspberry Skewer








Preparation

  1. Muddle the Raspberries with the rest of the Bottom Layer ingredients.

  2. Shake with ice, pour and double strain into a chilled Coupe glass.

  3. Shake together all the Top Layer ingredients with ice.

  4. Pour and strain slowly down the back of a bar spoon to layer on top of the Raspberry Layer.

  5. Garnish with a Pineapple and Raspberry skewer.
