Pineapple Mojito

How do you make one of the most popular Rum cocktails even better ? Add pineapple of course. This variation of the classic Mojito will make your jaw drop.

If you have read our article on the Mojito, you will know how taken back I was when I tried one for the first time. The strong aromatic mint flavour just takes you to a place of comfort and relaxation. Since then I found many different variations of the classic Mojito each of them piquing my interest. But the one that caught my eye the most was the Pineapple Mojito. There is something I love about Pineapple about how it pairs so well with so many other ingredients and flavours to make for incredible drinks. Some of my favourite cocktails such as the Leg Spreader, the Paradise Cocktail and Lava lamp all include Pineapple juice, so it was no coincidence that this added extra to a great drink was going to appeal to me.

This drink has everything you’d want in a well balanced cocktail, the sweet from the Pineapple juice and sugar syrup , the slight sour to match up with it from the Limes and the fizz from the soda water which tones down some of the more potent flavours to make for easy drinking. So, if you are already a fan of the original Mojito and are looking to broaden your drinking experiences, then this will definitely be the one variant you will want to try first. Here is how a Pineapple Mojito is made.



Ingredients

 
  • 1 ½ oz. (45ml) White Rum

  • 3 oz. (90ml) Pineapple juice

  • 1 oz. (30ml) Soda water

  • A splash of sugar syrup

  • Lime wedges

  • Pineapple chunks

  • Mint leaves

Garnish: A large Pineapple wedge and or Mint spring





Preparation

 
  1. In your highball glass add Lime wedges, Pineapple chunks and sugar syrup and muddle gently to release the flavours and juices.

  2. Fill the glass with ice adding a few mint leaves between each layer of ice.

  3. Add the Rum to the glass.

  4. Add the Pineapple juice and top off with soda water.

  5. Garnish with a large Pineapple wedge.




Further Information

 

As talked about in the original Mojito article, slapping your mint leaves before putting them in the drink and rimming the glass with them can give a much more intense mint flavour and aroma if that is what you are looking for.

If possible like with all cocktails that include fruit juices, use fresh squeezed if possible so you can get the best possible flavour and refreshing natural taste out of your Pineapple Mojito.
