A Timeless Italian Classic
Elegant, refreshing and wonderfully simple, the Bellini is one of the world's most famous sparkling cocktails. Originating in Venice, Italy, the drink was first created in the 1940s at the legendary Harry's Bar and has since become a staple at brunches, celebrations and summer gatherings across the globe.
Traditionally made with just peach purée and sparkling wine, the Bellini proves that great cocktails don't need a complicated list of ingredients. Its light, fruity character and beautiful golden colour make it a perfect choice for warm weather and special occasions alike.
Flavour Profile
The Bellini is all about showcasing the natural sweetness of ripe peaches. Fresh peach purée provides juicy stone-fruit flavours with subtle floral notes, while Prosecco contributes crisp acidity and lively bubbles that keep the drink light and refreshing.
The result is a cocktail that feels bright, elegant and incredibly easy to drink. Unlike many fruit-based cocktails, the Bellini isn't overly sweet, with the sparkling wine balancing the richness of the peach beautifully.
Using homemade peach purée takes the drink to another level, adding a fresher and more authentic fruit flavour that really shines through in every sip.
Why the Ingredients Work So Well Together
Peaches and sparkling wine are a natural pairing. The soft sweetness and velvety texture of the peach purée complement the dry, crisp character of Prosecco, creating a cocktail that is both refreshing and indulgent.
The carbonation helps lift the fruit flavours and gives the drink a light, celebratory feel, while the simplicity of the recipe allows the quality of the ingredients to take centre stage.
It's a perfect example of balance, where neither ingredient overpowers the other.
In this recipe we have used homemade Peach Purée instead of store bought Peach Nectar. This give your Bellini a personal touch and a brighter glow, so we highly recommend going this route if you can.
Perfect for Any Occasion
The Bellini is incredibly versatile. It's equally at home served at a summer garden party, a wedding reception, a relaxed brunch with friends or as a welcome drink for guests.
Its lower alcohol content compared to many cocktails makes it approachable, while its elegant presentation ensures it always feels a little special. Garnished with a fresh peach slice, it's as visually appealing as it is delicious.
Final Thoughts
The Bellini has remained popular for decades for a very good reason. It's simple, sophisticated and packed with fresh fruit flavour. With just a handful of ingredients, it delivers a refreshing and elegant drinking experience that's perfect for almost any occasion.
If you're looking for a cocktail that's easy to make, beautiful to serve and guaranteed to impress, the Bellini is a timeless classic that's always worth revisiting.
